Assistant Manager – CuiScene Restaurant

About the role

The Assistant Manager will support the Restaurant Manager in delivering exceptional, personalized dining experiences at the CuiScene Restaurant, aligning with Fairmont’s Heartist philosophy. You will engage guests, anticipate needs, and ensure high service standards throughout buffet operations.

Key responsibilities

• Supervise daily buffet operations for breakfast, lunch, and dinner, ensuring smooth opening and closing procedures.
• Monitor buffet presentation, food replenishment, hygiene standards, and guest flow.
• Coordinate with the Culinary team for timely replenishment and quality presentation of buffet items.
• Coach, motivate, and schedule restaurant staff, conducting briefings and assigning duties.
• Support financial goals by controlling inventory, minimizing waste, and handling billing and POS procedures.
• Ensure compliance with hotel policies, safety regulations, and brand standards.
• Collaborate with Kitchen, Stewarding, Engineering, and Housekeeping to maintain seamless operations.

Required profile

• Minimum 2–3 years experience in an assistant managerial role within a luxury hotel or high‑volume restaurant.
• Strong knowledge of buffet operations and international dining concepts.
• Excellent leadership, communication, and problem‑solving abilities.
• Ability to work effectively under pressure in a fast‑paced hospitality environment.
• Knowledge of HACCP and food safety procedures; proficiency in English.
