Captain – Outside Catering

About the role

The Captain – Outside Catering leads the delivery of high‑quality food and beverage service for off‑site events at JW Marriott Marquis Dubai. Reporting to the Food & Beverage Manager, you will coordinate all aspects of outside catering, ensuring seamless execution for corporate functions, weddings and special occasions.

Key responsibilities

• Communicate service requirements to chefs, stewards and service teams for each function.
• Prepare and present accurate group charges and final checks.
• Oversee set‑up, service and breakdown of catering operations at external venues.
• Manage inventory, ordering and cost control for outside catering events.
• Ensure compliance with health, safety and hygiene standards.
• Train and supervise junior staff, fostering a high‑performance team.

Required profile

• Proven experience in hotel or large‑scale catering operations.
• Strong leadership and communication skills.
• Ability to work under pressure and manage multiple events simultaneously.
• Customer‑focused attitude with a passion for hospitality.
