Chef de Cuisine – All Day Dining

About the role

The Chef de Cuisine – All Day Dining will lead the culinary operations of the All Day Dining restaurant at Rixos Marina Abu Dhabi. Reporting to the Executive Chef, you will ensure exceptional food quality, consistency and guest satisfaction across breakfast, lunch, dinner, buffet and à la carte services in a luxury hotel environment.

Key responsibilities

• Manage daily kitchen operations for all day dining, overseeing breakfast, lunch, dinner, buffet and à la carte service.
• Develop and maintain diverse menus featuring international and local cuisine, ensuring taste, portion control and presentation standards.
• Supervise, train and motivate the culinary team, planning production schedules and allocating duties.
• Control food costs, wastage and inventory, and ensure accurate ordering, storage and handling of ingredients.
• Maintain HACCP‑compliant food safety, hygiene and sanitation standards through regular inspections.
• Collaborate with the Executive Chef and F&B team on menu planning, promotions and seasonal concepts.
• Monitor guest feedback and implement improvements to enhance the dining experience.

Required profile

• Minimum 36 months (3 years) of experience in a similar senior kitchen role, preferably in a luxury hotel or resort.
• Proven ability to lead and develop a kitchen team in a high‑volume, high‑standards environment.
• Strong knowledge of food safety, HACCP guidelines and cost control practices.
