Chef de Cuisine – Bull & Bear Restaurant

About the role

The Chef de Cuisine will lead the culinary vision of Bull & Bear, the signature restaurant at Waldorf Astoria Dubai International Financial Centre. Reporting to the Executive Chef, you will be responsible for delivering a refined, Forbes Five‑Star dining experience that reflects the Waldorf Astoria heritage.

Key responsibilities

• Develop and execute the restaurant’s business plan, aligning menu concepts with financial targets and market strategy.
• Monitor sales, food costs, profit margins and waste, taking corrective actions to improve commercial performance.
• Collaborate with the Executive Chef and F&D Operations to create innovative menus, promotions and seasonal offerings.
• Ensure consistent delivery of high‑quality, visually appealing dishes while adhering to food safety standards.
• Lead the kitchen team, fostering an inclusive environment, coaching staff and managing performance.
• Address customer feedback, dietary requirements and allergy concerns with precision and professionalism.
• Support Hilton’s sustainability initiatives through local sourcing, seasonal produce and waste reduction.

Required profile

• Minimum 36 months of progressive culinary experience in a luxury hotel or fine‑dining setting.
• Proven ability to manage kitchen operations, control costs and drive revenue.
• Strong leadership and team‑development skills.
• Commitment to food safety, quality standards and sustainable practices.
