Chef de Cuisine – Italian Cuisine

About the role

The Chef de Cuisine – Italian Cuisine will lead the Italian kitchen at Park Hyatt Abu Dhabi Hotel & Villas, ensuring service is courteous, professional, efficient and flexible at all times while adhering to the hotel’s performance standards.

Key responsibilities

• Supervise and demonstrate all kitchen duties, maintaining the standards set in the Master Task Lists.
• Assign tasks to subordinates, implement multi‑tasking principles and periodically review performance.
• Maintain a hands‑on presence in the operation at all times.
• Implement flexible scheduling based on business patterns.
• Manage par stocks for equipment, supplies and inventory, ensuring the outlet is fully equipped.
• Develop standard recipes to control food cost and achieve monthly forecasted food cost targets.
• Control operating expenses and ensure cost containment.
• Oversee payroll control through flexible workforce planning and coordination with other F&B outlets.
• Participate in the annual operating budget, projecting revenues, expenses and FF&E requirements.

Required profile

• Previous experience as Chef de Cuisine – Italian in a hotel of good standards.
• Currently based in the United Arab Emirates (preferred).
