Chef de Partie – Pastry & Bakery

About the role

One&Only is looking for a talented Chef de Partie – Pastry to join the culinary team at the upcoming One&Only One Za'abeel resort in Dubai. The role is focused on delivering high‑quality pastries, desserts and baked goods that meet the brand’s standards of creativity, precision and consistency.

Key responsibilities

• Lead and manage the pastry section during preparation and service.
• Prepare and present desserts, pastries and baked items to brand standards.
• Ensure consistency, quality and innovative presentation of all pastry outputs.
• Support menu development and create seasonal dessert concepts.
• Maintain food safety, hygiene and HACCP compliance.
• Assist with stock control, ordering and minimising food waste.
• Train and support junior pastry team members.

Required profile

• Proven experience as a Pastry Chef de Partie or strong Demi Chef de Partie – Pastry.
• Solid technical pastry skills with meticulous attention to detail.
• Ability to work efficiently in a fast‑paced kitchen environment.
• Strong teamwork and time‑management abilities.
• Knowledge of food safety, hygiene and HACCP standards.
• Passion for pastry innovation and continuous improvement.
