Chef de Partie – Pastry

About the role

The JW Marriott in Dubai is seeking an experienced Chef de Partie to lead its pastry section. You will be responsible for preparing high‑quality pastries, desserts and special menu items while maintaining the highest standards of hygiene and presentation.

Key responsibilities

• Prepare special pastries, desserts and substitute items according to recipes and presentation standards.
• Regulate oven, broiler, grill and roaster temperatures; operate kitchen equipment safely.
• Thaw frozen items, portion, arrange and garnish dishes accurately.
• Maintain food logs, monitor quality and quantity, and report excess items for daily specials.
• Communicate menu specials and out‑of‑stock items to Food & Beverage staff.
• Assist management with hiring, training, scheduling and employee coaching.
• Follow all safety, security and company policies; report maintenance needs and incidents.
• Uphold professional uniform standards and protect confidential information.

Required profile

• Technical or vocational school qualification in culinary arts or pastry.
• Minimum 3 years of relevant pastry experience in a hotel or upscale restaurant.
• No supervisory experience required.
