Chef de Partie – Seafood & Grill Cook

About the role

Join Accor’s hotel kitchen in Dubai as a Chef de Partie specializing in seafood and grill stations. You will work alongside a dynamic culinary team to deliver high‑quality dishes that reflect the brand’s commitment to responsible hospitality.

Key responsibilities

• Supervise, coordinate and participate in the preparation of mise‑en‑place for all food‑and‑beverage outlets.
• Control freshness, preparation techniques and storage of all seafood and grill products.
• Check personal hygiene and work standards of Demi Chefs and Commis Chefs on your section.
• Assist the Chef de Cuisine in developing new recipes and menu concepts.
• Manage daily inventory, product turnover and ordering for your section.
• Oversee cooking procedures, portioning, garnishing and presentation of dishes.
• Create work rosters in consultation with the Sous‑Chef and allocate tasks according to the mise‑en‑place list.
• Maintain high standards of personal hygiene, grooming and uniform presentation.

Required profile

• Previous experience in a similar Chef de Partie or senior cook role, preferably in seafood or grill stations.
• Strong knowledge of food safety, hygiene standards and storage protocols.
• Ability to work under pressure while maintaining quality and consistency.
• Excellent communication skills to collaborate with colleagues from other departments.
• Commitment to health, safety and security procedures.
