Chief Steward

About the role

The Chief Steward leads the stewarding department at Qasr Al Sarab Desert Resort, ensuring the highest standards of cleanliness, hygiene and service throughout the property. This senior position oversees all back‑of‑house operations, manages staff schedules, and guarantees that guests experience flawless presentation of tableware and kitchen equipment.

Key responsibilities

• Implement and monitor the Safety Food Management system to maintain high‑quality hygiene standards.
• Set, maintain, and enforce departmental standards, ensuring all staff are trained to required levels.
• Develop and manage work schedules for stewarding personnel.
• Oversee washing, cleaning, drying and storage of silver, glassware, chinaware, pots and pans according to established procedures.
• Maintain cleanliness of work areas and upkeep of cleaning equipment.
• Prepare and verify inventory lists for both internal and external functions.
• Control use of chemicals and detergents to meet specifications.
• Collaborate with the Food & Beverage Manager to manage inventories and stock levels.
• Ensure storerooms are kept neat, tidy and well‑organized.
• Maintain uniform standards and grooming for self and team members.
• Report maintenance defects and safety hazards, placing appropriate signage.
• Maintain daily logbooks, conduct briefings and compile monthly breakage reports.

Required profile

• Proven experience in stewarding or back‑of‑house operations within a luxury hotel or resort.
• Strong knowledge of food safety, hygiene standards and chemical handling.
• Ability to train, supervise and motivate a diverse team.
• Excellent organizational skills for inventory control and scheduling.
• Attention to detail in maintaining equipment, uniforms and work environments.
