Commis 1 – Seafood Market

About the role

The Seafood Market Commis supports the kitchen team in delivering high‑quality seafood dishes for Le Méridien Hotels & Resorts in Dubai. This full‑time position involves preparing special meals, maintaining food safety standards, and assisting with daily operations.

Key responsibilities

• Prepare special meals and substitute items according to recipes.
• Regulate temperature of ovens, broilers, grills and roasters.
• Thaw frozen items in refrigeration units and ensure proper portioning and garnish.
• Maintain food logs and monitor quality and quantity of prepared dishes.
• Communicate with chefs and service staff about specials, excess items and out‑of‑stock menu items.
• Prepare and cook cold foods and hot dishes following quality and presentation standards.
• Assist management with hiring, training, scheduling and employee coaching.
• Follow all safety, security and company policies, reporting any incidents.

Required profile

• Technical, trade or vocational school degree.
• Minimum 3 years of relevant food‑preparation experience.
• No supervisory experience required.
• Ability to stand, walk, lift up to 25 lb and perform repetitive kitchen tasks.
