Commis 2 – Kitchen Assistant (Dubai)

About the role

The Commis 2 will join the culinary team at NH Collection Dubai The Palm, supporting food preparation and production while upholding the highest standards of quality, hygiene and cleanliness. Working under the Chef de Partie and senior chefs, you will develop practical kitchen skills in a fast‑paced hotel environment.

Key responsibilities

• Prepare ingredients and food items according to approved recipes and standards.
• Complete daily mise‑en‑place for the assigned kitchen section.
• Assist senior chefs with cooking, plating and food preparation during service.
• Store, label and rotate food products following FIFO procedures.
• Maintain cleanliness and organization of workstations, equipment and kitchen areas.
• Follow HACCP, food safety, hygiene and sanitation standards at all times.
• Control food waste and use ingredients responsibly.
• Check freshness and quality of ingredients and report any concerns.
• Handle kitchen equipment and utensils safely.
• Support other kitchen sections during busy periods as needed.

Required profile

• Previous culinary experience, preferably in a hotel or restaurant setting.
• Basic knowledge of food preparation, cooking techniques and hygiene practices.
• Willingness to learn and develop culinary skills.
• Good teamwork and communication abilities.
• Ability to work in a fast‑paced environment and flexible to work shifts, weekends and public holidays.
