Commis I – Kitchen Assistant (Hotel)

About the role

The Colbert Collection at Dukes The Palm Dubai Hotel is seeking a motivated Commis I to support the kitchen team. This entry‑level position offers hands‑on experience in a luxury hotel environment, working closely with the Chef de Partie.

Key responsibilities

• Assist the Chef de Partie and follow instructions for daily service.
• Gather and accurately measure all meal ingredients.
• Wash, peel, and chop vegetables and fruits.
• Cut, season, and prepare various meats.
• Prepare basic dishes such as salads and sauces.
• Track inventory supplies and ensure proper stock in refrigerators and freezers.
• Maintain hygiene standards and keep the workstation clean.
• Plate meal items according to hotel standards.
• Dispose of spoiled or expired food items safely.

Required profile

• Minimum 12 months experience in a large luxury hotel (500+ rooms) kitchen.
• Pre‑opening experience is an advantage.
• Proven work experience as a Commis.
• Active listening and effective communication skills.
• Flexibility to work in shifts.
• Strong organizational and multitasking abilities in a fast‑paced environment.
