Commis I – Kitchen Assistant

About the role

Join the culinary team at Fairmont Bab Al Bahr as a Commis I, supporting the preparation and cooking of high‑quality dishes in a five‑star beachfront hotel. You will work in a dynamic kitchen environment, ensuring every plate meets the brand’s exacting standards.

Key responsibilities

• Prepare and cook food items according to standardized recipes, portion control, and presentation guidelines.
• Complete daily mise en place for all meal periods and special events.
• Operate independently within an assigned kitchen section while maintaining consistency and quality.
• Monitor freshness, quality, and proper storage of food products using FIFO principles.
• Maintain cleanliness and organization of workstations, equipment, utensils, and storage areas.
• Accurately record requisitions, stock control, temperature logs, and cleaning records.
• Support Chef de Partie, Sous Chef, and Executive Chef during à la carte, buffet, banquet, and special event operations.
• Assist in training Commis II and Commis III colleagues and participate in daily kitchen briefings.

Required profile

• Minimum of 1 month of kitchen experience or relevant culinary training.
• Strong attention to detail and commitment to food safety standards.
• Ability to work efficiently in a fast‑paced, team‑oriented environment.
