Commis II – Cold Kitchen

About the role

We are looking for a passionate Commis II to join the Cold Kitchen team at Rotana’s Centro Al Manhal and Al Rawda Arjaan hotels in Abu Dhabi. You will work closely with the Demi Chef de Partie and other kitchen staff to deliver high‑quality dishes while maintaining strict hygiene standards.

Key responsibilities

• Support the Demi Chef de Partie or Commis I in daily kitchen operations.
• Prepare food according to menu specifications set by the Chef de Partie.
• Maintain a hygienic work area in line with hotel policies.
• Control food stock and monitor food cost within your section.
• Prepare daily mise‑en‑place and produce food across main kitchen and satellite stations.
• Follow instructions from superiors to complete assigned tasks.
• Ensure consistent quality and stay updated on new products, recipes, and techniques.
• Coordinate with other sections on cleanliness, wastage, and cost control.

Required profile

• Completed professional kitchen apprenticeship or chef training course.
• Previous experience in reputable establishments with solid culinary skills.
• Fluent English communication.
• Proven knowledge of food preparation, presentation, and preservation.
• Positive, dynamic, creative and dedicated team player.
• Ability to work in a multicultural environment and under pressure.
• Competencies: job understanding, responsibility, adaptability, teamwork, customer focus.
