Commis II – Kitchen Assistant (5‑Star Hotel)

About the role

The Commis II will join the culinary team at Grand Mercure Dubai City, a 5‑star Accor hotel. You will be responsible for preparing, cooking and presenting high‑quality dishes while maintaining the highest standards of hygiene, food safety and guest satisfaction.

Key responsibilities

• Prepare and cook food according to standard recipes and presentation guidelines.
• Assist the Chef de Partie in daily operations of the assigned kitchen section.
• Maintain cleanliness and organization of workstations, equipment and storage areas.
• Follow HACCP, food safety and hygiene standards at all times.
• Store, label and rotate food items using the FIFO method.
• Support mise en place and ensure all ingredients are ready before service.
• Monitor food quality and report any concerns to the Chef de Partie.
• Minimize food waste and use ingredients efficiently.
• Assist with inventory management by reporting stock shortages.
• Collaborate with colleagues to ensure smooth kitchen operations.

Required profile

• Formal culinary diploma or equivalent certificate.
• Minimum of 2 years experience in a hotel or restaurant kitchen.
• Ability to follow recipes, maintain hygiene standards and work under pressure.
• Strong teamwork and communication skills.

Required skills

• Food safety (HACCP) knowledge.
