Commis III – Kitchen Assistant (Full-time)

About the role

The Commis III will join the culinary team at Fairmont Bab Al Bahr, supporting the preparation and cooking of menu items in line with hotel recipes, portion standards and presentation guidelines. The role focuses on daily mise en place, maintaining a clean workstation and ensuring strict adherence to food safety and hygiene standards.

Key responsibilities

• Prepare ingredients – washing, peeling, chopping, weighing and measuring – for daily kitchen operations.
• Complete daily mise en place to ensure readiness for service.
• Maintain cleanliness and organization of workstations, equipment, utensils and storage areas.
• Apply FIFO stock rotation, proper labeling and storage of food items.
• Follow HACCP, food safety, sanitation and hygiene standards as required by local regulations and Accor policies.
• Assist senior chefs during buffet, à la carte, banquet and special event service.
• Monitor ingredient quality, report shortages or concerns, and minimise food waste through portion control.
• Ensure all food is prepared and served within established quality and time standards.

Required profile

• Previous experience in a hotel or restaurant kitchen (advantageous).
• Ability to work under supervision, follow standard operating procedures and maintain professional communication.
• Strong teamwork orientation and willingness to support all kitchen sections.
• Commitment to continuous learning and participation in departmental training.
