Commis III – Pastry Kitchen

About the role

The Commis III will support the pastry team at Fairmont Bab Al Bahr, a five‑star beachfront hotel in Abu Dhabi. This entry‑level position involves preparing a wide range of pastries, desserts, breads and cakes while maintaining the high standards of the Fairmont brand.

Key responsibilities

• Assist in the preparation and production of pastries, desserts, cakes, breads and other bakery items according to standard recipes.
• Measure and weigh ingredients accurately and ensure proper mise en place before service.
• Support daily pastry operations to ensure timely production and presentation.
• Maintain food quality, consistency and presentation in line with brand standards.
• Follow HACCP and food safety regulations for preparation, storage and handling.
• Operate kitchen equipment safely and report maintenance issues.
• Keep workstations, equipment and storage areas clean and organized.
• Monitor stock levels, label, date and store items using FIFO procedures.
• Assist with buffet setups, banquets, special events and seasonal promotions.

Required profile

• Previous experience in a pastry or bakery kitchen, preferably within a hotel or restaurant environment.
• Basic knowledge of pastry preparation, baking techniques and dessert presentation.
• Understanding of food safety, sanitation and HACCP principles.
• Ability to work collaboratively with kitchen colleagues and follow hotel policies.

Required skills

• Knowledge of HACCP and food safety regulations.
• Understanding of FIFO stock rotation.
• Basic pastry preparation skills.
• Baking techniques.
