Deputy Sushi Master

About the role

Deputy Sushi Master will support the Sushi Master at L'Abysse Dubai, a fine‑dining restaurant within One&Only The Palm. The role combines meticulous sushi preparation with strict adherence to hygiene and safety standards in a 5‑star hospitality environment.

Key responsibilities

• Assist the Sushi Master in all kitchen duties, from mise en place to counter service.
• Prepare nigiri and other sushi items following exact recipes and presentation standards.
• Maintain and continuously improve HACCP and food‑safety procedures.
• Ensure personal hygiene and grooming meet brand expectations at all times.
• Communicate guest requests to the Sushi Master and accommodate them whenever possible.
• Follow the restaurant handbook and operational guidelines without deviation.

Required profile

• Minimum 36 months of experience in a 5‑star hotel or upscale restaurant kitchen.
• Culinary school diploma or equivalent training.
• Fluent English communication skills.
• Strong commitment to precision, cleanliness and guest service.
