Director – Fine Dining

About the role

Wynn Al Marjan Island is seeking a Director – Fine Dining to shape and lead the resort’s high‑end dining portfolio. Reporting to the Food & Beverage Administration team, you will define the strategic vision for all fine‑dining venues and ensure they reflect the Wynn brand and luxury standards.

Key responsibilities

• Develop and execute the strategic plan for fine‑dining operations, aligning with brand objectives.
• Collaborate with culinary, bar, marketing and guest experience teams to create integrated, memorable dining experiences.
• Maintain outstanding food quality and service across all venues.
• Lead, coach and develop department heads, restaurant managers and senior service staff, fostering a performance‑driven culture.
• Monitor market trends, adjust menus, pricing and staffing, and propose innovations to enhance the restaurant’s image.
• Work closely with culinary and bar leaders on menu development, promotions and guest personalization.
• Analyse guest feedback, operational KPIs and financial metrics to drive continuous improvement.
• Represent the fine‑dining portfolio in cross‑departmental meetings and build strong internal relationships.

Required profile

• Proven experience in fast‑paced, high‑end luxury restaurant environments.
• Background in Michelin‑star, Gault‑Millau or 50‑Best restaurant settings is preferred.
• Deep knowledge of Forbes 5‑Star standards and luxury service delivery.
• Demonstrated ability to lead large teams in high‑volume, high‑expectation settings.
• Excellent communication, interpersonal and organizational skills.
• Strong time‑management and written/ verbal communication abilities.
