Executive Chef

About the role

Yubi, the UAE’s first homegrown hand‑roll bar, is seeking an Executive Chef to lead culinary operations across all its global venues. Reporting to senior management, you will ensure the brand’s signature Japanese craftsmanship, quality, and consistency are delivered in every location.

Key responsibilities

• Oversee daily kitchen operations worldwide, focusing on precise sushi‑rice preparation, seafood quality, and hand‑roll assembly.
• Develop and evolve hand‑roll menus using premium, seasonal ingredients while maintaining brand consistency.
• Conduct regular tastings and audits to guarantee flavor, presentation, and portion standards.
• Manage food costs through strategic sourcing, inventory control, and waste reduction, especially for high‑value seafood.
• Lead, train, and mentor sushi chefs and kitchen teams across all markets, ensuring adherence to Yubi’s techniques and service speed.

Required profile

• Culinary degree or diploma from a recognized institution.
• 10+ years of progressive culinary experience, including leadership of multiple venues or concepts.
• Deep knowledge of Japanese cuisine, sushi, hand‑roll preparation, rice mastery, seafood handling, and expert knife skills.
• Proven track record in menu development, cost control, and kitchen operations management.
