Junior Sous Chef – Pierchic Restaurant

About the role

We are looking for a motivated Junior Sous Chef to join the culinary team at Pierchic Restaurant, a flagship venue of Jumeirah Hotels & Resorts in Dubai. The role supports the Head Chef and Sous Chef in delivering high‑quality dishes and maintaining the restaurant’s renowned standards.

Key responsibilities

• Supervise the pass and inspect every dish before service, ensuring consistency in the absence of senior chefs.
• Take charge of the kitchen operations when the Sous or Head Chef is unavailable, adhering to quality and safety procedures.
• Lead, motivate and train junior brigade members, delegating tasks and fostering a collaborative environment.
• Manage ingredient orders, stock levels and monitor food waste, using the restaurant’s ordering system.
• Coordinate with the Sous Chef, CDC and Outlet Manager to address pending work and equipment issues promptly.
• Conduct regular checks of produce quality, handle returns, and ensure proper labeling and record‑keeping.
• Develop and present new recipe ideas, supporting menu innovation within set timelines.
• Maintain cleaning standards and complete daily kitchen checklists and documentation.

• Ability to work effectively with a multicultural team and lead by example.
• Good organisational skills for managing stock, orders and kitchen records.
• Willingness to learn about new ingredients, equipment and cooking techniques.
• Flexibility to step into senior roles when required.
