Restaurant Captain – Sand & Koal

About the role

The Emirates Palace Mandarin Oriental in Abu Dhabi is seeking an experienced Restaurant Captain to lead the Sand & Koal dining area. Reporting to the Assistant Restaurant Manager, you will ensure smooth operations, high service standards, and memorable guest experiences in a luxury hotel setting.

Key responsibilities

• Coordinate and supervise opening and closing brigade duties.
• Assist in planning service based on reservations and special events.
• Inspect equipment, furniture and dining areas for cleanliness and proper functioning.
• Train waitstaff and junior team members.
• Set up and maintain the assigned restaurant section according to brand standards.
• Welcome guests, present menus and beverage lists, and provide recommendations.
• Take food and beverage orders and ensure timely delivery.
• Oversee table settings and service flow, especially during peak periods.

Required profile

• Proven experience in a senior front‑of‑house role within a luxury hotel or fine‑dining restaurant.
• Strong leadership and team‑coaching abilities.
• Excellent attention to detail and commitment to service excellence.
• Ability to work under pressure and adapt to dynamic service environments.

Required skills

• Knowledge of restaurant service standards and procedures.
• Familiarity with POS systems and basic restaurant equipment.
