Join the award‑winning culinary team at Dai Pai Dong, Rosewood Abu Dhabi’s signature Chinese restaurant. As Senior Sous Chef (Assistant Chef de Cuisine) you will lead kitchen operations during your shift, ensuring every dish reflects authentic Cantonese and Szechuan flavors while maintaining the highest standards of quality and creativity.

Key responsibilities

• Lead kitchen operations on shift, guaranteeing consistency in food quality, presentation, and taste.
• Supervise and train kitchen associates, providing hands‑on guidance.
• Oversee key sections such as dim sum and Chinese BBQ, maintaining authenticity.
• Support menu development, recipe standardisation, and food‑cost management.
• Manage daily ordering, stock levels, inventory, and waste control.
• Uphold HACCP, hygiene, and safety standards across all kitchen activities.

Required profile

• 5–10 years experience in a luxury hotel or Michelin‑level Chinese kitchen, preferably in Mainland China or Hong Kong.
• Strong expertise in Cantonese and Szechuan cuisine, including dim sum and BBQ preparation.
• Proven leadership and coaching abilities in a fast‑paced environment.
• Solid understanding of HACCP, kitchen operations, and cost control.
• Excellent organisational skills, attention to detail, and clear communication in English.
