Sous Chef (Arabic) – Premium Lounge Culinary Lead

About the role

Plaza Premium Group is seeking an experienced Sous Chef specialized in Arabic and Middle Eastern cuisine to lead the culinary operations of its premium airport lounge in Dubai. You will be responsible for delivering high‑quality food, ensuring guest satisfaction, and maintaining strict food safety standards in a fast‑paced, 24/7 environment.

Key responsibilities

• Oversee all kitchen activities, including production planning, menu execution, and buffet/à‑la‑carte service.
• Control food cost, wastage, and inventory while meeting budget targets.
• Develop and refine menus and recipes to reflect authentic Arabic, Middle Eastern, and international flavors.
• Ensure compliance with HACCP and Dubai Municipality food safety regulations.
• Lead, train, and develop the culinary team, coordinating with Operations, Procurement, and QA.
• Manage labor scheduling and monitor kitchen KPIs during peak flight schedules.
• Respond to emergency kitchen issues and support continuous improvement initiatives.

Required profile

• Minimum 7 years of experience as a Sous Chef or Junior Sous Chef.
• At least 4 years of experience working in the Middle East.
• Strong knowledge of Arabic, Middle Eastern, and international cuisine.
• Experience in airport lounge, hotel, or airline catering environments is preferred.
• Willingness to work rotating shifts, weekends, and public holidays in a 24/7 airport setting.
• Flexibility to be deployed across UAE or international Plaza Premium locations.
