Sous Chef - Italian Cuisine

About the role

We are seeking an experienced Sous Chef specialized in Italian cuisine to join our culinary team in Dubai. You will work closely with the Executive Chef to deliver high‑quality Italian dishes while maintaining the standards of our luxury hotel and resort properties.

Key responsibilities

• Supervise and coordinate the daily activities of cooks and kitchen staff.
• Design and execute decorative food displays and ensure proper portioning, arrangement, and garnish.
• Monitor food preparation quantities and communicate menu specials or out‑of‑stock items to service staff.
• Prepare special meals, substitute items, and assist cooks with various tasks.
• Maintain inventory levels, monitor stock of supplies, and keep kitchen logs for the food safety program.
• Ensure food quality meets specifications and report any deviations to the manager.
• Support management in hiring, training, scheduling, evaluating, and coaching employees.
• Follow all safety, security, and uniform policies, and report any incidents or maintenance needs.

Required profile

• Technical or vocational culinary education.
• 4‑6 years of relevant kitchen experience, with at least 2 years in a supervisory role.
• Strong knowledge of Italian cuisine and food safety standards.
• Ability to work extended periods standing, lifting up to 25 lb, and performing physical tasks.
