Sous Chef – Italian Restaurant

About the role

We are looking for an experienced Sous Chef to join the culinary team at Isola, our upscale Italian dining concept in Dubai. Reporting to the Head Chef, you will help maintain the highest standards of food quality, presentation, and service in a fast‑paced restaurant environment.

Key responsibilities

• Support the Head Chef in daily kitchen operations and service flow.
• Supervise food preparation across all stations, ensuring recipes and brand standards are followed.
• Maintain consistency in taste, presentation, portion control and timely mise en place.
• Lead, train and motivate the culinary team, delegating tasks and monitoring performance.
• Assist with menu development, seasonal specials and new recipe implementation.
• Manage inventory, ordering, stock control and supplier coordination.
• Monitor food costs, portioning and waste to meet financial targets.
• Ensure compliance with HACCP, food‑safety, hygiene and sanitation standards.
• Coordinate with front‑of‑house staff for efficient service and handle guest dietary requirements.
• Take charge of kitchen operations in the Head Chef’s absence.

Required profile

• Minimum 3–5 years of relevant culinary experience, preferably in an upscale restaurant.
• Previous experience as a Sous Chef or strong Junior Sous Chef.
• Deep knowledge of Italian cuisine and proven kitchen leadership.
• Ability to work effectively in a high‑pressure, fast‑moving environment.
