Sous Chef - Pastry

About the role

We are seeking a talented Sous Chef – Pastry to join FIVE Hotels and Resorts in Dubai. You will work in a luxury hotel environment, supporting the Chef de Cuisine in delivering award‑winning pastry experiences for our guests.

Key responsibilities

• Assist the Chef de Cuisine in creating innovative, seasonal pastry menus using locally sourced ingredients.
• Oversee daily pastry production, ensuring consistency, quality, and adherence to brand standards.
• Manage inventory, place orders, and control food costs while maintaining optimal stock levels.
• Ensure compliance with HACCP, health and safety, and food hygiene regulations.
• Lead, train, and motivate the pastry team to achieve high performance in a fast‑paced kitchen.
• Participate in pre‑opening set‑up and continuous improvement of kitchen operations.

Required profile

• Culinary degree or equivalent qualification (preferred).
• Proven experience as a Sous Chef in a luxury hotel or fine‑dining restaurant.
• Strong leadership and organisational abilities, with excellent communication in English.
• Experience in pre‑opening kitchen set‑up and working in Forbes/LQA‑rated properties is a plus.
