Speciality Sous Chef – Culinary Operations

About the role

The Speciality Sous Chef (Cucina) leads the culinary team in delivering high‑quality dishes and decorative food displays at a Marriott hotel in Dubai. This role oversees food preparation, ensures proper portioning and presentation, and supports the Food & Beverage team with menu specials and guest needs. The position also contributes to staff development and maintains strict food safety standards.

Key responsibilities

• Supervise and coordinate the activities of cooks and kitchen workers.
• Determine food presentation, create decorative displays, and ensure proper portioning and garnish.
• Monitor food quantities, stock levels, and kitchen supplies.
• Inform service staff of menu specials and out‑of‑stock items.
• Prepare special meals, substitute items, and assist cooks with various tasks.
• Maintain kitchen logs for food safety programs and report any quality issues to management.
• Assist management with hiring, training, scheduling, evaluating, and coaching employees.
• Follow all company safety, security, and uniform policies and report maintenance or safety concerns.

Required profile

• Technical, trade, or vocational school degree.
• 4–6 years of related culinary experience.
• At least 2 years of supervisory experience.
