Specialty Sushi Chef – Luxury Hotel

About the role

We are seeking a Specialty Sushi Chef to join the culinary team at Rixos Premium Dubai JBR, a luxury hotel delivering authentic Turkish hospitality. The successful candidate will lead the sushi station, creating high‑quality Japanese dishes that meet our exacting standards.

Key responsibilities

• Prepare and present a wide range of sushi, sashimi, maki, nigiri and other Japanese specialties following established recipes.
• Select, inspect and handle fresh fish, seafood, rice and other ingredients, ensuring optimal freshness and safety.
• Maintain impeccable knife skills and execute precise cutting techniques for sushi preparation.
• Adhere to all food safety, hygiene, sanitation and HACCP standards.
• Manage storage, labeling, rotation and waste reduction of sushi ingredients.
• Keep the sushi work area, equipment and stations clean and organized.
• Contribute to menu development with creative sushi concepts and presentations.
• Monitor food costs, control wastage and support budgeting targets.
• Collaborate with the Sous Chef, Executive Chef and culinary team for smooth daily operations.
• Train and mentor junior team members in sushi techniques.

Required profile

• Proven experience in Japanese and Asian cuisine, specifically sushi preparation.
• Strong knowledge of ingredient selection, handling and storage.
• Ability to work in a fast‑paced, multicultural kitchen environment.
• Professional attitude and commitment to quality.
