Sommelier – Luxury Fine Dining at Carbone

About the role

As a Sommelier at Carbone, part of Atlantis The Royal in Dubai, you will work closely with the Bar Manager and Wine Manager to curate and maintain an exceptional wine program for a luxury fine‑dining environment.

Key responsibilities

• Update and develop the wine list in collaboration with the management team.
• Order, receive, rotate and store wine stock, ensuring optimal condition.
• Recommend wine pairings to guests based on menu and personal preferences.
• Serve wines at correct temperatures and with appropriate glassware.
• Identify upselling opportunities to enhance the guest experience.

Required profile

• Minimum two years experience in a luxury restaurant or hotel wine service.
• Level 2 certification from the Wine & Spirit Education Trust (WSET) or equivalent.
• International experience in Italian fine‑dining venues is a plus.
• Proven ability to prepare wine lists, manage stock and train staff.

Required skills

• WSET Level 2 qualification.
