Assistant General Manager – Italian & Seafood

About the role

Wynn Al Marjan Island, the UAE’s first integrated resort slated to open in 2027, is seeking an Assistant General Manager for its Italian & Seafood restaurant. The role supports the General Manager in delivering a Forbes 5‑Star dining experience and driving operational excellence.

Key responsibilities

• Execute daily shifts according to SOPs, ensuring consistency, timeliness, and mise en place readiness.
• Control costs within approved budgets, supporting the GM with labor scheduling, inventory, and cash handling.
• Develop and implement revenue‑maximising strategies, promotions, and seat‑utilisation plans.
• Coordinate with the kitchen on menu availability, dietary needs, pacing, and specials.
• Manage reservations, waitlists, and floor plans to optimise guest flow.
• Prepare daily shift reports, escalating issues and proposing solutions.
• Oversee restaurant administration, including timekeeping, petty cash, incident logs, and stock counts.
• Maintain service standards, conduct table touches, handle complaints, and provide VIP service.
• Coach and supervise supervisors, captains, and service teams to achieve department goals.

Required profile

• 2–3 years leadership experience in fine‑dining environments, preferably with 50+ covers per day.
• Experience in Michelin‑recognized or Gault Millau restaurants is a plus.
• Secondary school diploma; a bachelor’s degree in hospitality management is advantageous.
• Fluent English and another European language; strong communication and interpersonal skills.
• International exposure in trend‑setting markets is desirable.

Required skills

• WSET Level 2 certification.
• Proficiency with MS Office.
• Experience using POS software and digital reporting tools.
