Assistant General Manager – Restaurant Operations

About the role

Sunset Hospitality Group is seeking an experienced Assistant General Manager to support the launch and ongoing success of TAPASAKE, a concept that blends Japanese and Mediterranean cuisine in a stylish, poolside setting. Reporting to the General Manager, you will help drive daily operations, commercial performance, and exceptional guest experiences.

Key responsibilities

• Support the General Manager in overseeing all aspects of restaurant operations.
• Lead front‑of‑house teams to deliver high service standards and memorable guest experiences.
• Drive revenue growth through effective floor management and guest engagement.
• Monitor financial targets, including sales, labor costs and profitability.
• Ensure consistent execution of brand standards, policies and procedures.
• Build and maintain relationships with VIP guests, partners and stakeholders.
• Assist with recruitment, onboarding, training and development of staff.
• Maintain compliance with health, safety, hygiene and company standards.
• Participate in pre‑opening activities such as team mobilization and operational setup.

Required profile

• Minimum 2 years of experience as an Assistant General Manager in a luxury or lifestyle standalone restaurant.
• Background in high‑volume dining concepts, preferably Japanese, Mediterranean or festive dining.
• Proven leadership of large front‑of‑house teams.
• Strong commercial acumen with experience in budgeting, P&L management and operational KPIs.
• Excellent guest relations skills, including experience with VIP clientele.
• Pre‑opening project experience is highly desirable.
• Fluent in English; additional European languages are a plus.
