Assistant Steward

About the role

The Assistant Steward supports the Stewarding department at Mandarin Oriental Downtown, Dubai, ensuring that all back‑of‑house areas meet the highest standards of cleanliness, hygiene and equipment care. Reporting to the Director of Back of House, you will work closely with the Back of House Manager and the stewarding team to deliver efficient, high‑quality service.

Key responsibilities

• Assist the Back of House Manager with scheduling, inter‑departmental coordination and performance monitoring.
• Supervise daily stewarding activities such as dishwashing, waste disposal and hygiene maintenance.
• Manage stock and inventory of operating equipment and supplies, monitor chemical usage and aim to reduce breakage and loss.
• Support safety, health and environmental standards, report incidents and participate in HACCP and FLHSSE compliance.
• Conduct regular walkthroughs, attend meetings, respond to last‑minute F&B requirements and perform any additional duties as needed.

Required skills

• Knowledge of HACCP principles.
