Chef De Cuisine - All Day Dining

About the role

Anantara The Palm Dubai Resort, part of Anantara Hotels & Resorts, is looking for a full-time Chef de Cuisine for its all-day dining restaurant in Dubai. The role organizes the kitchen's daily operations, maintains food quality and standards, and leads the team under the supervision of the Executive Chef.

Key responsibilities

• Organize all activities within the restaurant kitchen so that the operation runs safely, smoothly and profitably within the hotel framework.
• Develop and maintain the restaurant's cuisine concepts and standards for food preparation and presentation.
• Keep up with local market trends and recommend menu changes based on seasonal product availability.
• Help achieve department budget goals and minimize food cost through proper preparation, inventory, requisition, food par and control systems.
• Follow Anantara food preparation and presentation guidelines to ensure consistent quality, and suggest improvements to them.
• Maintain food safety and protection, including proper handling, dating, storage and rotation of food, and basic sanitation practices.
• Forecast weekly business demand to plan staffing and food production efficiently.
• Keep the outlet safe and manage its assets, including a monthly preventative maintenance inspection.
• Lead departmental training and supervise all associates, including hiring and discipline in conjunction with the Executive Chef, leading by example with a hands-on approach.
