Commis 1 - Kitchen Assistant

About the role

NH Collection Dubai The Palm, part of Minor Hotels, is looking for a Commis 1 to join its culinary team. The Commis 1 supports the preparation and production of high-quality food, working closely with the Chef de Partie and senior chefs to ensure consistency, hygiene and presentation standards, and to deliver an excellent dining experience for guests.

Key responsibilities

• Prepare and cook food items according to approved recipes, portion sizes and presentation standards.
• Ensure daily mise-en-place is ready before service.
• Support the Chef de Partie in the smooth operation of the assigned kitchen section.
• Maintain consistent food quality, taste, freshness and presentation.
• Follow food safety, hygiene, HACCP and sanitation standards at all times.
• Store, label, rotate and handle food products correctly using FIFO procedures.
• Minimise food waste and help maintain appropriate stock levels.
• Keep the workstation, equipment and surroundings clean and organised.
• Report equipment defects, food quality concerns or shortages to the Chef de Partie.
• Assist other kitchen sections during busy periods and follow NH Collection and Minor Hotels policies and brand standards.

Required profile

• Previous experience as a Commis Chef, preferably in a 4- or 5-star hotel or quality restaurant.
• Culinary qualification or relevant professional training preferred.
• Good teamwork and communication skills.
• Ability to work efficiently in a fast-paced kitchen and flexibility to work shifts, weekends and public holidays.
• Passion for culinary excellence and willingness to learn and develop.

Required skills

• Basic to good knowledge of food preparation and cooking techniques.
• Knowledge of food hygiene and safety standards.
