Commis II

About the role

The Commis II will work in the kitchen of Swissotel Al Murooj in Dubai, supervising an assigned station and delivering consistent, high‑quality food service in line with Swissotel standards. The role involves preparing mise en place, following recipes, and maintaining hygiene and safety standards to maximise guest satisfaction.

Key responsibilities

• Prepare and maintain the assigned station, ensuring all ingredients and equipment are ready for service.
• Follow senior chefs’ instructions, assist with mise en place and plating according to standard recipes.
• Manage inventory requisitions and organise daily tasks to meet service timelines.
• Adhere to HACCP, sanitation and “first‑in‑first‑out” procedures, keeping the work area clean.
• Monitor food waste and support cost‑control measures.

Required profile

• High school diploma or culinary diploma from an accredited institution.
• Minimum one year documented experience as a Commis or similar entry‑level kitchen role in a fine‑dining or upscale hotel.
• Proficiency in food preparation techniques, knife skills and mise en place.
• Good knowledge of HACCP guidelines and food safety regulations.
• Ability to read and interpret standardized recipes and plating specifications.
• Fluency in English.
