Commis II - Restaurant Kitchen

About the role

Rixos, a luxury resort group established in 2000 in Turkey, is hiring a Commis II for its restaurant in Ras Al-Khaimah. The role covers kitchen organisation, food quality control, recipe and costing support, and liaison with the Executive Sous Chef and the outlets.

Key responsibilities

• Prepare your own inventory list for your station and cover another chef's station when they are absent
• Ensure standard recipes and plating guides are followed
• Provide the Executive Sous Chef with the daily market list, recipes and costing, and personally check goods received for quality and quantity
• Propose food promotions, events and other food-related activities to the Executive Sous Chef and Executive Chef
• Communicate daily with Outlet Supervisors and make sure food items are clearly explained
• Control food wastage without compromising quality, and recommend system improvements to raise efficiency and service levels
• Maintain records and documentation, keep good intradepartmental communication through log books and memoranda, and follow operational standards
• Check buffets and food quality before customers arrive and during service, keep buffets refilled, and check the quality of food leaving the kitchen
• Apply HACCP according to hotel standards, attend training classes, and share knowledge with colleagues
• Be punctual, well-groomed, and cooperate with colleagues and customers

Required profile

• Diploma or degree in vocational hospitality
• 1-2 years of experience in a 4-5 star hotel
