Cost Controller – Hospitality

About the role

The Meydan Hotel, located at Dubai’s iconic Meydan Racecourse, is seeking a Cost Controller to manage food and beverage (F&B) costings, inventories and profitability. The role supports the F&B department by providing accurate cost analysis, controlling waste and ensuring optimal financial performance.

Key responsibilities

• Calculate daily, weekly and monthly F&B costs and compare them against sales.
• Verify receiving reports, invoices and unit costs; ensure correct coding and inventory updates.
• Transfer sales data from POS to inventory system and conduct spot checks on purchasing, receiving, storing and issuing functions.
• Prepare recipe costings with the Executive Chef and monitor portion control, wastage and pilferage.
• Conduct monthly yield tests for food, butcher and alcohol items.
• Produce monthly cost reports, inventory turnover reports and beverage potential reports.
• Participate in half‑yearly stock‑takes for linen, equipment and housekeeping inventories.
• Assist management with financial analysis for major events, brunches and race days.

Required profile

• Bachelor’s or Master’s degree in Commerce, Accounting or related field.
• Minimum 2 years experience in a similar cost control role within a five‑star hotel or comparable hospitality environment.
• Strong knowledge of F&B store and receiving operations, especially in the UAE market.
• Good understanding of accounting principles and profit‑and‑loss analysis.

Required skills

• Proficiency in word‑processing software.
• Advanced spreadsheet skills (e.g., Microsoft Excel).
• Experience with database software for inventory management.
