Head Chef – Handroll Bar

About the role

YUBI, Dubai’s first homegrown handroll bar, is seeking a Head Chef to lead its culinary operations. The successful candidate will ensure every handroll meets the brand’s high standards of freshness, precision and guest experience, while fostering a collaborative kitchen environment.

Key responsibilities

• Oversee daily kitchen operations, guaranteeing smooth workflow and timely preparation of handrolls.
• Maintain handroll quality and consistency in rice, seafood freshness, temperature, portioning and presentation.
• Execute menus developed by the Executive Chef, providing feedback on performance and guest preferences.
• Lead, train and supervise chefs and kitchen staff in handroll techniques, knife skills, hygiene and speed of service.
• Manage inventory, ordering and stock levels, minimizing waste and handling high‑value seafood responsibly.
• Control food costs and ensure adherence to HACCP and food safety standards.

Required profile

• Proven experience as a Head Chef or Senior Sous Chef in a high‑quality or high‑volume Japanese or handroll‑focused restaurant.
• Strong expertise in sushi and handroll preparation, including rice mastery and seafood handling.
• Solid understanding of food cost control, inventory management and waste reduction.
• Demonstrated leadership and team development abilities.
• Knowledge of HACCP and food safety regulations.
