Restaurant Manager – Bull & Bear Steakhouse

About the role

The Restaurant Manager will lead lunch and dinner operations at Bull & Bear, the signature steakhouse of Waldorf Astoria Dubai International Financial Centre, ensuring exceptional food, drink and service experiences for guests.

Key responsibilities

• Achieve commercial targets, manage budgets, forecasts and optimise covers through effective revenue management.
• Partner with the Executive Chef to develop innovative menus and beverage programmes while maintaining luxury standards.
• Deliver Forbes Five‑Star and Waldorf Astoria service standards, manage guest feedback and build relationships with VIPs and regulars.
• Lead, coach and develop a high‑performing team, oversee recruitment, scheduling and performance management.
• Ensure compliance with health, safety, food safety and brand policies, manage inventory, purchasing and financial controls.

Required profile

• Proven leadership experience in luxury food & beverage venues.
• Strong commercial focus with a track record of revenue growth and cost control.
• Excellent communication and relationship‑building skills with guests and internal stakeholders.
• Ability to make strategic decisions in a fast‑paced environment while maintaining composure under pressure.

Required skills

• In‑depth knowledge of wine varieties, regions, food‑wine pairing and premium spirits.
• Understanding of luxury service standards and Forbes Five‑Star expectations.
• Experience with inventory, purchasing and cost management processes.
