Sous Chef - Bakery

About the role

Anantara Mina Al Arab Ras Al Khaimah Resort is looking for a Sous Chef for its bakery section. The role oversees daily bakery operations and ensures timely production of all bakery products, in a luxury resort setting.

Key responsibilities

• Oversee daily bakery operations and ensure timely production of all bakery products.
• Prepare and supervise the production of breads, rolls, doughs, specialty baked goods and other items according to recipes and standards.
• Develop new recipes and introduce innovative products in line with guest preferences and business needs.
• Ensure consistency in taste, texture, presentation, portioning and product quality.
• Coordinate production with other kitchen sections, restaurants, banquets and catering operations.
• Supervise, train and develop bakers and bakery assistants; assign duties, prepare schedules and monitor team performance.
• Ensure staff follow standard operating procedures, recipes and hygiene requirements, and promote teamwork and discipline.
• Support recruitment, onboarding and continuous development of bakery team members.
• Maintain HACCP compliance, food safety regulations and hygiene standards, and check ingredient storage, handling, labelling and rotation.
• Keep the bakery production area clean, sanitized and well maintained.

Required profile

• Diploma or professional qualification in Bakery, Baking and Pastry Arts or a related culinary field preferred.
• Minimum 4-5 years of relevant bakery experience, preferably in a hotel or luxury hospitality environment.
• Previous supervisory experience in a bakery operation is required.
• Strong leadership, organisational and communication skills; able to work under pressure.

Required skills

• Bread making, dough preparation, fermentation and baking techniques.
• Knowledge of bakery equipment.
• Understanding of food safety, HACCP, inventory control and cost management.
