Sushi Chef – Lead Sushi Kitchen

About the role

Discovery Dunes Golf Club is looking for an experienced Sushi Chef to lead its Sushi Kitchen. Reporting to the Director of Culinary, you will shape the menu, ensure top‑notch food quality, and deliver memorable dining experiences for members in a luxury setting.

Key responsibilities

• Oversee daily operations of the Sushi Kitchen, maintaining exceptional food quality and presentation.
• Develop and execute innovative sushi and Japanese‑inspired menu items.
• Train, mentor and develop junior chefs, fostering a high‑performing team culture.
• Ensure strict hygiene, food safety and HACCP compliance.
• Manage inventory, ordering, stock control and meet food cost targets.
• Source premium ingredients and work closely with suppliers.
• Drive operational excellence through effective scheduling, productivity management and waste reduction.
• Support culinary activations, special events and member dining experiences.
• Build strong relationships with members through exceptional service.

Required profile

• Minimum 5 years of experience in high‑end Japanese restaurants, luxury hotels, resorts or private clubs.
• Proven leadership experience managing and developing culinary teams.
• Strong understanding of food costing, inventory management and kitchen operations.
• Commitment to food safety excellence and HACCP standards.
• Ability to thrive in a fast‑paced luxury hospitality environment.
