About the role

The Wynn Al Marjan Island resort is seeking an Assistant General Manager for its Lebanese restaurant. This senior position will support the General Manager in delivering a five‑star dining experience, overseeing daily operations, and driving revenue growth in a high‑end, beachside venue.

Key responsibilities

  • Execute daily shifts according to SOPs, ensuring consistency, timeliness, and mise‑en‑place readiness.
  • Operate within approved budgets, assisting the GM with cost control, labor scheduling, inventory, and cash handling.
  • Develop and implement business strategies and promotions to maximise revenue, seat utilisation, and productivity.
  • Coordinate with the kitchen on menu availability, dietary needs, pacing, and specials.
  • Manage reservations, waitlist, and floor plans to optimise turn times and guest flow.
  • Prepare daily shift reports, escalate issues and propose solutions to the GM.
  • Support restaurant administration tasks such as timekeeping approval, petty cash checks, incident logs, and stock counts.
  • Maintain service standards and Forbes 5‑Star expectations, conduct table touches and follow‑ups.
  • Handle guest complaints and recovery promptly, involving the GM when necessary.
  • Provide personalised service to VIPs and media guests, coordinating with PR/VIP services.
  • Supervise, coach and develop supervisors, captains and service teams to achieve department goals.
  • Schedule training plans with the F&B Trainer and keep SOPs up to date.
  • Adhere to health & safety, food hygiene standards and champion safe work practices.
  • Participate in sustainability initiatives such as reduce, reuse, recycle.

Required profile

  • 2–3 years of leadership experience in fine‑dining environments, preferably managing 50+ covers per day.
  • Experience in Michelin‑recognized or Gault Millau restaurants is preferred.
  • Strong knowledge of Lebanese cuisine and wine; WSET Level 2 is an advantage.
  • Understanding of budgeting basics, allergen management and food safety.
  • Secondary school diploma; a bachelor’s degree in hospitality management is a plus.
  • Fluent spoken and written English and an additional European language.

Required skills

  • Proficiency with MS Office applications.
  • Experience using POS software.
