Chef de Cuisine – Specialty Dining Concept

About the role

The Specialty Chef de Cuisine will lead the culinary operations of a premium specialty dining concept within an exclusive luxury destination in Dubai. Reporting to the Executive Chef, you will be responsible for delivering exceptional food experiences through menu innovation, high standards of preparation, and effective team leadership.

Key responsibilities

• Lead daily culinary operations and supervise Chef de Parties, Demi Chefs de Partie, Commis and kitchen staff.
• Develop, test, cost and standardise menus and recipes that reflect the concept’s identity and quality standards.
• Plan food production for regular service, private functions and special events, ensuring consistency in portioning and presentation.
• Manage food costs, inventory, purchasing and waste reduction while maintaining strict food‑safety and hygiene compliance.
• Conduct briefings, tastings, training sessions and performance coaching for the culinary team.

Required profile

• Culinary degree, diploma or recognised professional qualification.
• Minimum five years’ experience as a Chef de Cuisine, Head Chef, Executive Sous Chef or senior specialty‑cuisine chef in a luxury or high‑end dining environment.
• Proven expertise in the relevant specialty cuisine, menu development, recipe costing and food‑cost control.
• Strong leadership, communication and organisational skills with the ability to manage multiple priorities.

• Proficiency with kitchen‑management systems.
• Advanced use of Microsoft Office.
