Chef De Partie – Garde Manger

About the role

We are looking for a motivated Chef de Partie to lead the Garde Manger (cold kitchen) operation at our luxury hotel in Abu Dhabi. You will ensure that all cold dishes, salads, and buffet displays meet the highest standards of quality, safety, and presentation.

Key responsibilities

• Prepare all potentially hazardous foods at the correct temperatures, adhering to HACCP and food safety guidelines.
• Produce, present, and garnish all Garde Manger items according to hotel recipes and standards.
• Ensure daily menu, buffet, banquet, and à la carte items are ready on time.
• Maintain strict personal hygiene, grooming, and kitchen uniform standards.
• Optimize ingredient usage while controlling portion size and food costs.
• Communicate material and ingredient needs to the Sous Chef for next‑day planning.
• Assist in designing and arranging buffet decorations, cold displays, and appetizers.

Required profile

• Demonstrated experience in a cold‑kitchen environment, preferably at a hotel or upscale restaurant.
• Commitment to food safety, personal hygiene, and professional kitchen conduct.
• Ability to work efficiently under time‑pressured service periods.

Required skills

• HACCP knowledge or certification.
• Food safety and temperature control expertise.
• Garde Manger preparation and plating techniques.
• Portion control and food cost management.
