Commis 1 – Hot & Cold Kitchen

About the role

Palazzo Versace Dubai is seeking a motivated Commis 1 to support both the hot and cold sections of its high‑end kitchen. This on‑site position offers the chance to work in a luxury hotel environment, assisting the senior culinary team in delivering exceptional dining experiences.

Key responsibilities

• Support the Chef de Partie and senior culinary team in daily kitchen operations.
• Prepare and organise mise en place for hot and cold stations according to service requirements.
• Assist in cooking and plating a variety of dishes while adhering to recipes and quality standards.
• Maintain consistent taste, portioning, and presentation of all food items.
• Contribute to à la carte, buffet, banquet and other culinary services as assigned.
• Ensure proper preparation, storage, labeling and handling of ingredients in line with food safety standards.
• Keep the workstation, equipment and storage areas clean and well‑organized.
• Follow HACCP, hygiene, sanitation and health‑and‑safety procedures at all times.
• Monitor food quality, report shortages or issues to the Chef de Partie and help minimise waste.

Required profile

• 1–2 years of experience as a Commis 1 or in a similar role, preferably in a 5‑star hotel or upscale restaurant.
• Hands‑on experience in both hot and cold kitchen sections.
• Good knowledge of basic cooking techniques, mise en place and kitchen equipment.
• Understanding of HACCP and food‑safety standards.
• Culinary qualification or diploma from a recognised institution is preferred.
• Attention to detail, strong work ethic and ability to thrive in a fast‑paced, high‑volume environment.
• Positive attitude, teamwork spirit and willingness to learn.
