Commis II – Pastry Kitchen

About the role

The Commis II will join the pastry kitchen at Fairmont Bab Al Bahr, a five‑star beachfront hotel in Abu Dhabi. Working under the Pastry Chef, you will support daily production of a wide range of pastry items while maintaining the high standards expected of a luxury property.

Key responsibilities

• Assist in preparing pastries, desserts, cakes, breads, chocolates and other items according to established recipes.
• Support the Pastry Chef and senior team members with mise en place, baking, decoration and finishing tasks.
• Maintain consistent quality, taste, texture and presentation of all products.
• Ensure cleanliness and organization of workstations, equipment and storage areas in line with HACCP and food‑safety standards.
• Handle, store and label ingredients properly to preserve freshness and minimise waste.
• Help with buffet setups, banquets, à la carte orders and special events as required.
• Monitor stock levels, report shortages and assist with inventory control.
• Care for kitchen equipment, reporting any maintenance issues promptly.
• Follow hotel policies, safety procedures and Fairmont brand standards.

Required profile

• Previous experience in a pastry kitchen within a luxury hotel, resort or high‑volume bakery.
• Basic knowledge of pastry techniques, baking methods and dessert preparation.
• Ability to follow recipes accurately and work efficiently in a fast‑paced environment.
