Commis III - Fine Dining Kitchen

About the role

Swissôtel Al Murooj, a Swissôtel by Accor in downtown Dubai, is hiring a Commis III to supervise their assigned station or section. The role produces a consistent, high-quality product and delivers courteous, professional and efficient service in line with Swissôtel standards and policies, with the aim of maximizing guest satisfaction.

Key responsibilities

• Follow HACCP guidelines, municipal regulations and the clean-as-you-go policy at all times
• Taste, season and present food to the required standard before serving, and prepare and plate orders from F&B staff accurately and on time
• Prepare and cook food according to the recipes of the chef de cuisine or senior chef, keeping quality and quantity to standard
• Set up the station on time, leave mise en place for the next shift and complete the shift handover
• Store food covered, dated and labelled, and rotate stock according to procedure
• Keep the work area and equipment safe, sanitary and clean, and assist stewards with daily cleaning
• Work unsupervised, adapt to business demands and working hours, and take part in cross-training and advance preparation when asked
• Sign off tools, knives and uniforms, fill out log sheets daily, and report problems or complaints to the chefs

Required profile

• College graduate or equivalent education from an accredited culinary institute or formal culinary training program
• At least one year of professional kitchen experience in a fine dining or upscale hospitality establishment
• Ability to work independently and adhere strictly to procedures
• Strong organization and time management in a fast-paced kitchen
• Professional demeanor under demanding conditions
