Cost Controller – Hospitality

About the role

Mama Shelter is looking for a Cost Controller to join its Dubai hotel operation. You will be responsible for monitoring and analysing all cost elements, ensuring the property stays within approved budgets while supporting data‑driven decision making across the team.

Key responsibilities

• Monitor and analyse daily, weekly and monthly operational costs against budget.
• Maintain accurate cost records for COGS, inventory, labour and other operational expenses.
• Review cost reports, conduct audits and identify discrepancies or inefficiencies.
• Track inventory levels to prevent overstocking, stockouts and unnecessary expenses.
• Validate purchase orders, invoices and contracts to ensure correct recording and compliance.
• Collaborate with Finance, Procurement, Operations and other departments to promote cost‑effective practices.
• Prepare regular cost performance and variance reports for management.
• Support annual budgeting, forecasting and cost planning activities.
• Analyse overtime, staffing levels and shift patterns to optimise workforce planning.
• Identify and drive cost‑saving initiatives without compromising quality or guest experience.

Required profile

• Strong analytical mindset with high attention to detail.
• Excellent numerical and reporting skills.
• Ability to work collaboratively across multiple departments.
• Experience in cost control, finance or related functions, preferably within hospitality.
• Comfortable working in a fast‑paced environment and handling multiple priorities.
