Demi Chef – Pastry & Bakery

About the role

The Demi Chef de Partie will assist the Chef de Partie in preparing pastry and bakery items to the highest standards, ensuring every dish exceeds guest expectations. This full‑time role is based at Al Maha Desert Resort & Spa, a Luxury Collection property in Dubai.

Key responsibilities

• Set up stations and ensure mise en place is ready for each service period.
• Monitor stock movement, place orders for your section, and minimise waste.
• Prepare all food according to recipes designated by the Sous Chef or Chef de Cuisine.
• Report any changes in food quality to the Chef de Partie or Sous Chef.
• Maintain product knowledge and communicate dish details to junior staff.
• Cross‑train in other areas as needed and mentor apprentices.
• Assist in implementing new menus, dishes, and regulations.
• Ensure proper storage, FIFO, temperature control, and labeling of all food items.
• Maintain kitchen cleanliness, sanitation, and compliance with food handling standards.
• Take over Chef de Partie responsibilities in their absence.

Required profile

• Minimum 4 years of culinary experience.
• Ability to supervise 1‑5 commis/apprentice staff members.
